Yep you read the heading correctly, a poitjie that cooks in just 30 minutes.
Now if you’re like me and are surrounded by impatient friends and family; that believe waiting 3 – 5 hours for a dish to cook is just unbearable torture. This recipe is the one for you.
I actually stumbled on this recipe by accident or should I say by laziness.
I had invited friends over for a potjie one afternoon, and in true Wally fashion. I completely forgotten to buy ingredients earlier that day. Luckily for me I already had all the main ingredients except for one pretty important one.
The meat, now the way my laziness & procrastination is set up, I simply refused to go to the shops; instead I decided to cook with what I’ve got. After rummaging in my freezer I managed to find a tray of chicken thighs & drumsticks and decided to just go with it.
It was this lazy Sunday that Wallys Chicken Poitjie Recipe was born.
Wallys Chicken Poitjie Recipe
Ingredients
· 1 tray of Chicken thighs & Drumsticks
· 1 onion
· 4 carrots
· 2 stalks of celery
· 2 TBS Garlic
· 1 packet of baby potatoes
· 1 sachet of Tomato paste
· 500ml heavy cream
· ½ cup of butter
· 30ml Oil
· 5 sprigs of fresh thyme
· 2 TBS Aminas Steak & Chops / Tandoori Chicken
· 300ml chicken stock
· 30ml honey
Method
· Roughly chop onions, celery and carrots (Peeled)
· Marinate chicken in Steak & Chops / Tandoori Paste, tomato paste & honey
· Place potjie pot on the fire and allow to heat
· Add butter, oil & thyme into the pot, wait until butter is completely melted then add garlic.
· Add the chicken into the pot skin side down to brown the meat. Turn if needed.
· Take chicken out of the pot and place aside for later.
· Now add in the chopped onion, carrots & celery, cook until onions are translucent.
· Put the meat back into the pot & stir
· Throw in the baby potatoes in whole then add chicken stock
· Cover with the lid and let boil for 10 minutes
· Remove the lid and let simmer for 10 more minutes
· Then pour in the cream and stir
· Leave uncovered for another 5 minutes.
· Season with salt and take off the heat its ready to serve.
